It’s sweet, golden brown, and a sign that spring is on the way. Maple Syrup production is off to a good start in Simcoe County.
Over at Shaw’s Maple Syrup in Oro-Medonte, they had an early start to the season. Owner Tom Shaw says their first boil was in January, and so far they have a fifth of a normal crop which is good for this time of year.
Stateside, milder weather has put a damper on production in some areas, but that hasn’t affected things in our region. Shaw says a good snow base here has helped slow the trees down so they don’t mature too quickly.
Shaw adds that he can’t predict what the crop will do in the next few months, but so far there is a decent amount of snow in the bushes to keep the trees from maturing, which means a good supply.
